Cream of Split Pea Soup

2 cups split peas
1/2 cup celery
1 onion, chopped
2-1/2 cups milk
4-1/2 cups boiling water
1/2 cup carrots, diced
2 teaspoons salt
May add chunks of ham, bacon, etc.

Wash split peas and sort. In large saucepan combine water, split peas, vegetables, and salt. Simmer until peas are soft, about 45 minutes, stirring occasionally. Put through a sieve or blender. Add milk and seasonings, chunks of meat then re-heat and serve.
