Creole Beef and Rice

8 Servings
¼ pound country sausage
¼ pound ground beef
1 cup celery, chopped (about 1-2 stalks)
1 onion, chopped
2 teaspoons Cajun seasoning, more or less to taste
1 ½ cups uncooked white rice
2 14 oz. cans canned stewed tomatoes
1 12 ounce vegetable juice, spicy
1 ½ cups frozen okra (optional)

Brown meat with onion, celery and Cajun seasoning, stir frequently. Add remaining ingredients. Add 1 cup water. Bring to a boil, cover, reduce heat and simmer 20-30 minutes.
