Autumn Quick Soup

2 lbs. ground beef
2/3 cup dry soup mix
2 cups diced carrots (use reconstituted dry carrots)
2 cups diced potatoes
1 cup diced celery
2 quarts water
2 quarts tomato juice

Brown ground beef. Add liquid and soup mix. Simmer 1/2 hour. Add vegetables and continue to simmer 1 hour. Serves 8.
