Whole Wheat Apple Cake

4 fresh apples, peeled and diced (or 4 cups rehydrated dried apples)
2 cups sugar
1/2 cup vegetable oil
2 teaspoons soda
1 teaspoon salt
2 eggs
2 cups whole wheat flour
1 cup white flour or 1 more cup wheat flour
2 teaspoons cinnamon
1 cup nuts (optional)
1 cup raisins (optional)
2 teaspoons vanilla

Place diced apples in a bowl. Add sugar, oil, vanilla, and eggs. Mix thoroughly. Sift dry ingredients together. Add to wet mixture. Stir in nuts and raisins, if desired. Pour into a greased 9x13-inch pan. Bake at 350 degrees for 50 minutes.

FROSTING:
2 cups powdered sugar
4 oz. cream cheese
1/2 cup butter
1 teaspoon vanilla

Beat well and frost cooled cake.

Testing comment: Wonderful!
